Ingredients
4 Eggs
1 Onion - chopped
1 tbsp Parsley - chopped
2 tbsp Butter - or margarine
1 tsp Cumin
1 tbsp Flour
6-8 tbsp Black Beans - or 1/2 can beans
Salt and Pepper
Directions
1. In a small skillet heat beans with water for 5- 7 minutes. Season with salt, pepper and cumin. Mash beans with a fork.
2. In a large skillet heat and stir 1 ½ tbsp margarine or butter and onion until yellow. Add parsley and after one minute add flour and stir until smooth. Add beans and stir for 3 minutes. Take off heat.
3. In a bowl beat eggs then add beans mixture. Stir to mix well.
4. In a large skillet heat ½ tbsp margarine or butter. Add eggs and beans mixture. Cook until the bottom of eggs is golden (1-2 minutes).
5. Flip the eggs to cook the other side. Move to a serving platter and serve immediately
